PREPARE FIRST, OR USE THE SAME PREPARED INGREDIENT
Donn’s mix (2:1 grapefruit-cinnamon)5 min heating or steeping + cooling
Donn’s mix — combine 20 ml fresh grapefruit juice with 10 ml cinnamon syrup for a 30 ml small batch; use only the listed drink measure. Cinnamon syrup — simmer 100 g sugar, 100 g water, and one 5 g cinnamon stick for 5 minutes; cool, strain, and refrigerate. The mix contains fresh juice, so keep it separate until serving.
These are preparation ratios. Make enough for the measured drink quantities; cooling time and final yield are not included in the mixing time.
- Squeeze the citrus and measure its juice before you start. Keep the listed garnish aside.

A LITTLE CEREMONY
The method.
Prepare your glass
Set out a clean highball glass for each serving. Do not put additional ice in the glass before blending.
Load the blender
Measure one serving of the liquid ingredients and bitters into the blender with 170 g finely cracked ice. Keep all garnish aside, and secure the lid.
Flash-blend briefly
Blend on high for five seconds only, just long enough to combine the liquids and break down the ice. Keep the drink slushy rather than making a smooth frozen drink.
Pour and garnish
Pour the complete contents, including the finely cracked ice, into the tall tumbler and add the measured mint sprig. Do not add any flames or extra rum.
