A LITTLE CEREMONY

The method.

  1. Prepare your glass

Set out a clean tiki mug of at least 500 ml for each serving. Add 100 g crushed ice per mug just before pouring.

  2. Measure into your shaker

For one serving, gently press the measured thin ginger slice with the passion fruit purée three times. Add all the measured liquid ingredients and maraschino drops. Keep the dried pineapple and lime garnish aside.

    Shake with confidence

Measure the still ingredients first. Add the recipe’s mixing ice, seal the shaker, and hold both parts firmly. Shake for the stated time. Keep bubbles and garnish outside the shaker.

  3. Shake until properly cold

Use one serving of the measured ingredients per batch. Add 180 g cubed ice and seal the shaker. Shake firmly until the outside feels very cold. Repeat with fresh mixing ice for each serving.

  4. Strain and finish

Use a cocktail strainer and a fine-mesh sieve to pour into the prepared tiki mug. Double-strain into the prepared tiki mug, holding the ginger pieces back. Add the measured dried pineapple slice and lime wheel.

    Use two strainers

Hold the mixing ice back with the cocktail strainer. Pour through a fine-mesh sieve held above the serving glass; it catches small ice chips and fruit or herb fragments.
