A LITTLE CEREMONY

The method.

  1. Prepare a small glass

Set out a clean small rocks glass. Cut one 2–3 cm cheek from the side of a washed lime, taking peel and a little flesh. Keep any ice aside.

  2. Wake up the citrus

Pour the measured 5 ml cane syrup into the glass. Squeeze the measured lime cheek over it, flesh facing down, then drop the cheek into the syrup.

  3. Measure the rhum

Add the measured 50 ml rhum agricole blanc directly to the glass. Stir gently for 10 seconds to combine the syrup, lime juice, and rhum.

  4. Serve in its simplest form

Serve the drink in the same glass without shaking, straining, or adding ice. The expressed lime cheek remains in the drink as its aromatic finish.
