A LITTLE CEREMONY
The method.
Prepare your glass
Chill the serving glass with ice and water, then empty it. Swirl the measured absinthe around the inside to coat it and discard the excess. Leave the glass empty; no serving ice is used.
Measure, then stir
Measure one serving of the rye, sweet vermouth, and cherry liqueur into a mixing glass. Do not add the discarded absinthe rinse. Add 180 g cubed ice and stir until cold; repeat with fresh mixing ice for each serving.
Stir smoothly
Move the spoon around the inside of the glass so the ice turns as a group. Follow the recipe’s time or cold-glass cue. Use the stated strainer if the mixing ice stays behind.
Strain with care
Hold the ice back with a strainer and pour into the prepared coupe glass.
The finishing touch
Add the measured garnish and serve immediately.
