A LITTLE CEREMONY
The method.
Prepare your glass
Set out a clean rocks glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.
Measure into the glass
Pour one serving of the measured still ingredients into each glass over the fresh ice.
Finish gently
Stir gently around the inside of the glass for 20–30 seconds, until cold and evenly combined. Keep the ice in the glass.
The finishing touch
Twist the orange peel over the glass to release its oils, then rest it in the drink.
Express a citrus peel
Hold the peel above the drink, colored skin facing the surface. Gently bend it to release the oils toward the glass. Follow the recipe for whether to rub the rim or leave the peel in the drink.
