A LITTLE CEREMONY

The method.

  1. Gently press the mint

Place the measured mint leaves and syrup in the cup. Press gently 3 times; do not shred.

    Press mint gently

Use the rounded end of a muddler or spoon to press the mint as directed. Aim to release its aroma, keeping the leaves mostly whole. Add the ice at the point stated in the recipe.

  2. Add bourbon and ice

Add the measured bourbon and 180 g crushed ice. Stir gently until the outside of the cup feels cold.

  3. Crown the cup

Add another 40 g crushed ice to form a small mound. Clap the mint sprig once between your palms and place it beside the straw.
