A LITTLE CEREMONY
The method.
Prepare your glass
Set out a clean rocks glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.
Measure into the glass
Pour one serving of the measured still ingredients into each glass over the fresh ice.
Finish gently
Stir the whisky and amaretto gently around the ice for 20 seconds to chill and combine. Do not add soda.
Keep the bubbles lively
Measure sparkling ingredients separately. Add them at the point stated in the recipe, then lift or stir gently if directed. Never shake carbonated ingredients in a sealed shaker.
The finishing touch
Twist the measured orange peel over the glass and place it in the drink.
Express a citrus peel
Hold the peel above the drink, colored skin facing the surface. Gently bend it to release the oils toward the glass. Follow the recipe for whether to rub the rim or leave the peel in the drink.
