A LITTLE CEREMONY
The method.
Prepare your glass
Fill a clean martini glass for each serving with ice and water to chill it while you mix. Empty it before pouring.
Measure, then stir
Measure one serving of the liquid ingredients and bitters into a mixing glass. Add 180 g of cubed ice. Stir smoothly until the glass feels very cold. Repeat with fresh mixing ice for each serving.
Stir smoothly
Move the spoon around the inside of the glass so the ice turns as a group. Follow the recipe’s time or cold-glass cue. Use the stated strainer if the mixing ice stays behind.
Strain with care
Hold the ice back with a strainer and pour into the prepared martini glass.
The finishing touch
Add the measured garnish and serve immediately.
