A LITTLE CEREMONY
The method.
Prepare your glass
Moisten the outside rim of a clean slim wine glass with the measured lemon wedge. Press only the outside into the measured caster sugar. Curl the measured broad lemon peel around the inside rim, then put the empty prepared glass in the refrigerator while mixing.
Measure, then stir
Measure one serving of the liquid ingredients and bitters into a mixing glass. Add 180 g of cubed ice. Stir smoothly until the glass feels very cold. Repeat with fresh mixing ice for each serving.
Stir smoothly
Move the spoon around the inside of the glass so the ice turns as a group. Follow the recipe’s time or cold-glass cue. Use the stated strainer if the mixing ice stays behind.
Strain with care
Hold the ice back with a strainer and pour into the prepared wine glass.
The finishing touch
Keep the sugared rim and curled lemon peel undisturbed, and serve immediately.
