Syrup preparation — Combine 100 g diced ripe apricot, 100 g sugar, and 100 g water in a small pan. Simmer gently for 5 minutes, stirring to dissolve the sugar. Cool, then strain through a fine sieve. Refrigerate in a clean sealed jar and use within 7 days.

A LITTLE CEREMONY
The method.
Prepare your glass
Set out a clean highball glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.
Measure into the glass
Pour one serving of the measured still ingredients into each glass over the fresh ice.
Finish gently
Add any measured sparkling ingredients last. Lift once gently with a bar spoon to combine; do not shake carbonated liquids.
Keep the bubbles lively
Measure sparkling ingredients separately. Add them at the point stated in the recipe, then lift or stir gently if directed. Never shake carbonated ingredients in a sealed shaker.
The finishing touch
Add the measured garnish and serve immediately.
